TIA
Tia (-mat) is the goddess of the Salty Sea in Babylonian mythology, who married the God of Freshwater to give birth to young Gods.
Tia, a Babylonian personification of saltwater who is generally depicted as a dragon, created the first gods out of her union with Apsu, the personification of fresh water. That's
why we named the yeast as TIA for short, which turns grains into the fresh water of life “UISGE BEATHA” (the water of life that will be called WHISKY in the future). Tia's figure is coming from the caricatured persona of a
microscopic image of yeast that turns sugar into alcohol.
The water to be used is very important for Tia to turn the mash into a real and delicious 'water of life'. The quality of the whisky is greatly influenced by the concentration of minerals in the water used for production. This is referred to as ‘water hardness’ and is expressed by the pH value (pondus hydrogenii).
It has been determined that the perfect water for use in whisky production has a hardness level below 7 pH (i.e. neutral), Tia works with the best performance and has a positive effect on the quality of the whisky.
